The easiest homemade bakings

Do you know the moment when you are sitting on your comfy sofa covered in the blanket, reading a book and in one second you start craving a homemade cake? However, there is no way you can leave your warm house, go shopping and buy a cake neither spend hours in the kitchen to cook some delights. I'm sure we’ve all been there.

That's why I would like to introduce you to my favorite recipes for the Caramelised cherry cake, Apple and Almond Pie and Lemon cupcakes. Not only they are super easy to make but also I am sure you have all of the ingredients in the kitchen already!

Caramelised cherry cake

Prep: 20 mins

Cook: 20 mins

Portions: 8-10

What you’ll need

  • 200g unsalted, softened butter, take some more for greasing

  • 200g caster sugar

  • 4 medium eggs

  • 200g self-raising flour, take some more for dusting

  • 1 tsp vanilla extract

  • around 8 tbsp caramelised cherries

  • 400ml double cream, whipped

  • icing sugar

Preparation

  1. Heat oven to 190C fan /170C gas. and grease profusely and flour two sandwich tins- 20cm.

  2. Put 200g of butter, 200g caster sugar and 1 tsp vanilla extract into a bowl. Then you just need to beat it well to in order to get a creamy consistency.

  3. Very slowly beat in 4 eggs, add one by one, then add 200g flour and mix very well.

  4. Half of the mix put to the one tin and the other half to the send one, then slip it into the oven and bake for 20 mins (until you see it raised and it's golden).

  5. Then take it out from the oven and let it cool for 5 mins in the tin.

  6. Top with 250ml whipped double cream and spread about 4 tbsp of caramelised cherries onto one cake.

  7. Sandwich the cakes together and dust with the 4 tbsp of caramelised cherries and 150ml of the whipped cream.

Apple and Almond Pie

Prep: 10 mins

Cook: 40 mins

Portions: 8-10

What you’ll need

  • ½ cup oil or olive oil

  • ½ cup maple syrup

  • 2 eggs

  • ½ cup apple sauce

  • 2 cups ground almonds

  • 1 tsp baking powder

  • 1 tsp cinnamon

For the topping

  • 1 apple

  • 1 tbsp maple syrup

  • ½ tsp cinnamon

Preparation

  1. Heat oven to 190C fan /170C gas.

  2. Oil (a little bit) a 20cm springform tin and line the base with a circle of baking parchment.

  3. Using mixer or blender, whizz together the oil and maple syrup for 30-40 secs. Then, add the eggs and whizz for another 1 min. Add the apple sauce and blend for 30-40 secs. Tip in the baking powder, ground almonds and 1 tsp salt and cinnamon. And blend again for 30 secs. Pour it into the tin, and bake for around 30-40 mins (until you see it's golden).

  4. Now it's time to make a topping. In a frying pan, cook the apple gently with the rest of the topping ingredients. Add ½ tsp salt until the apple is soft and gently caramelised. When the cake is ready, scatter the bronzed apple chunks on top of the cake.

  5. Top it with your favourite ice-creams and a dash of the cinnamon.

Lemon cupcakes

Prep: 20 mins

Cook: 20 mins

Portions: 12

What you’ll need

  • 140g softened and unsalted butter

  • 100g caster sugar

  • zest ½ lemon

  • 2 large eggs, lightly beaten

  • 140g self-raising flour

  • chocolate and icing sugar for decor

Preparation

  1. Heat oven to 180C fan /160C gas.

  2. Line a 10-hole bun tin.

  3. Beat the butter and sugar in a big bowl. Do it until it is really soft. Add the lemon zest.

  4. Stir in the eggs one by one, then fold in the flour until it is all combined.

  5. Divide the mixture between the cake cases.

  6. Bake for 20 mins until you see the cupcakes are golden.

  7. Cool it and decor with the piece of the chocolate and dash of the icing sugar.
